MHS Culinary Arts 2 will work from National Restaurant Association's
Foundations of Restaurant Management & Culinary Arts Level One
Textbook and Curriculum
MHS level 2 students will be trained and expected to take and pass the Safestaff Test during the school term as well as the ProStart Level 1 exam.
With successful completion of Culinary Arts 2, 8800520, the student will be able to consistently:
1. Exhibit the ability to follow state mandated guidelines for food service.
2. Identify and explain front-of-the-house and back-of-the-house duties.
3. Prepare and present food and beverage items to meet creativity aspects as well as quality standards.
4. Exhibit and utilize safe, secure, and sanitary work procedures.
5. Apply principles of food science in cooking and baking techniques.
6. Apply principles of nutrition in menu planning, cooking, and baking.
7. Perform front-of-the-house duties.
8. Perform back-of-the-house and inventory duties.
All culinary students are expected to demonstrate mastery of:
